Danette May's Famous Gluten-Free Fat-Burning Chocolate Chip Cookie Recipe

I am so excited to share with you my delicious homemade chocolate chip cookie recipe!

WARNING: You may be skeptical when you first see the ingredients, but I promise you will not be disappointed!

These cookies rise in the oven and look, smell and taste just like a delicious homemade chocolate chip cookie should.

And the best part...these amazing cookies won't add inches to your waistline!

Fat-Burning Chocolate Chip Cookies

Ingredients:

  • 1 1/2 cup almond butter (unsalted and raw)
  • 1/2 cup honey (or substitute 100% maple syrup)
  • 2 eggs (or substitute 4 Tbsp. chia seeds for 1 egg)
  • 1 Tbsp. Vanilla extract
  • 1/2 tsp. salt (only add the salt if you are using unsalted almond butter)
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2/3 cup shredded, unsweetened coconut
  • 1/2 cup dark chocolate chips (70% or higher cocoa)

Directions:

  1. Preheat oven to 350 degrees
  2. Oil baking sheets (coconut oil is preferred) or line with parchment paper
  3. Stir together first 7 ingredients. Mix well. Make sure honey is fully incorporated
  4. Add coconut and chocolate chips and mix well
  5. Scoop with a cookie scoop onto cookie sheets
  6. Bake 9-12 minutes or until lightly browned

Makes about 12-16 cookies with a level 3 Tbsp. cookie scoop
